A tava, or saj, is usually used to cook many varieties of leavened and unleavened crepes and flatbreads such as roti, saj bread, chaap, paratha, and dosa.
The tava is commonly found in Indian households and used as a utensil. It varies in diameter and ranges from 8 to 12 inches for home use, and up to an entire meter in commercial kitchens. In some cuisines, the flat clay plates are heated to high temperatures and used as griddles for cooking thin slices of meat and vegetables.
